Armenian pork kebabs, also known as "khorovats" or "shashlik," are a popular and delicious dish in Armenian cuisine. Here’s a simple and traditional recipe to make them:
Ingredients
- 2 pounds (about 1 kg) pork shoulder or pork loin, cut into 1.5-inch cubes
- 1 large onion, finely chopped
- 3-4 garlic cloves, minced
- 1/4 cup vegetable oil or olive oil
- 1/4 cup white wine or lemon juice
- 1 tablespoon tomato paste (optional)
- 1 tablespoon paprika
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon black pepper
- 1 teaspoon salt
- Fresh parsley, chopped (for garnish)
- Lemon wedges (for serving)
Instructions
Marinate the Pork:
- In a large bowl, combine the chopped onion, minced garlic, vegetable oil, white wine (or lemon juice), tomato paste (if using), paprika, ground cumin, ground coriander, black pepper, and salt.
- Add the pork cubes to the marinade, ensuring all pieces are well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to penetrate the meat.
Prepare the Skewers:
- If you’re using wooden skewers, soak them in water for about 30 minutes to prevent them from burning on the grill.
- Thread the marinated pork cubes onto the skewers, leaving a small gap between each piece to ensure even cooking.
Grill the Kebabs:
- Preheat your grill to medium-high heat.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally to ensure the pork is cooked evenly on all sides and has a nice char.
- The pork should reach an internal temperature of 145°F (63°C).
Serve:
- Once the kebabs are done, remove them from the grill and let them rest for a few minutes.
- Garnish with fresh chopped parsley and serve with lemon wedges on the side.
Serving Suggestions
- Serve the pork kebabs with lavash or pita bread.
- Accompany the kebabs with a side of grilled vegetables, such as bell peppers, tomatoes, and onions.
- A traditional Armenian salad or a yogurt-based dip like tzatziki can complement the kebabs well.
Enjoy your delicious Armenian pork kebabs!
